This restaurant, which owes its name to the Sicilian aristocrat who made the monastery into a hotel, is headed by the talented Chef Massimo Mantarro. Focusing on high quality, delicate and refined Sicilian cuisine, he creates dishes both elegant and full of flavour, while revisiting traditional cuisine and delighting the most demanding of palates.
